A citrus blend with savory and spicy flavors inspired by the Mojito cocktail, this Mojito Lime Marinade combines mint leaves, sugar, citrus juices, garlic, smoky chipotle, smoked paprika, and red chili pepper flakes for a vibrant kick. Made with simple ingredients from your fridge and pantry, it’s perfect for seafood or poultry. This recipe makes enough marinade for roughly 1½ to 2 pounds of meat.
Juice 2 medium oranges and 2 limes into a medium bowl. Finely chop 3 mint leaves and add them to the bowl. Stir in ½ teaspoon granulated sugar, ½ teaspoon chili pepper flakes, ½ teaspoon garlic powder with parsley, ½ teaspoon onion powder, ½ teaspoon chipotle powder, 1 teaspoon smoked paprika, and ½ teaspoon salt. Mix until everything is well combined.
Place the meat in a shallow dish or zip‑top bag. Pour the prepared citrus‑mint marinade over the salmon, shrimp, or chicken, making sure each piece is well coated. Cover and refrigerate—marinate salmon and shrimp for 15–30 minutes, and chicken for 1–2 hours (up to 4 hours for bone‑in pieces). Enjoy!
